What foods are specific to your area?

I had to laugh when I got a message from Barb who saw Holly's Facebook post that we had made sweet venison bologna and because it is a PA local food, she hadn't heard of it. So I'm wondering, What foods are specific to where you grew up that some of us may have never tried. 

Here are a few others from PA that you may or may not have heard of

Pickled red beet eggs.

Yep , all of those !! But I don't care for the sweet stuff, just plain is better. I guess you cold add in our style of chili . Most southern areas do not put kidney beans in it like us northern folks do Very Happy !!!
But I do love some good scrapple . Which in easy terms , everything left over from a pig after its been butchered !!!!

Calf Fries 
venison  bacon , only place ive ever seen it is here , actually think it came from wisconsin when a retired butcher moved here and started a processing service

Willy, I'm going to have to try the bacon for sure. The calf fries........... Well, I'm just not thinking that's going to go down so good.

Venison bacon and venison bologna are offered at just about every meat locker / venison processing place in the state of WI.  It doesn't get much better than venison bacon!  

Venison products also offered in my area include: venison breakfast sausage (patties or links), summer sausage, snack sticks (think slim jims), jerky, dried venison, polish sausage, hot dogs, bratwursts, italian sausage.  All of which are smoked or can have additional flavors added.

I'll second what Rick said- I've never had chili without kidney beans.

Not sure how prevalent it is in other states, but Friday nights = fish fry in Wisconsin (usually walleye or perch).  Then there's the WI staples which are cheese curds, sauerkraut and hotdish / goulash.  

I'm sure there are others, but I can't think of any more at the moment.
